Wine / Pavone


The result is a wine that is full-bodied, still young. “Pavone” in the mouth appears whole, round, well-balanced and fruity, structured with dense, lively and juicy tannings.

After the harvesting, the grapes ferment in steel containers and conical-shaped large containers made of oak wood. The maceration lasts between 20-30 days. Temperatures are not regulated.

The wine ages for 18/24 months in oak-wood barrels of a capacities ranging from 2.5 to 30 hl.

Finally, the wine rests in the bottle for another 4 months.
