This is about a wine that is mature, smooth and fully developed. A wine that in the mouth appears impetuous, warm and pulpy; intense and rich in essence; persistent with smooth and mellow tannings, consequently, an elegant and well-balanced wine.

After the harvesting, the grapes ferment in conical-shaped large containers made of oak wood. The maceration lasts between 30-60 days. Temperatures are not regulated.

The wine ages for at least 4 years in oak-wood barrels of a capacities ranging from 2.5 to 30 hl.

Finally, the wine rests in the bottle for another 1 to 2 years.

The name of the wine, Cuccuvaia, derives from the greek word “κουκουβάγια” which is the translation for owl.
